Easter Treats!

Easter is here! We love Easter. It’s a very special and important time of the year for many, and like Christmas a chance to gather with family and friends, have a little break from school or work and of course, enjoy some good food.
Scrumptious looking cakes, sweat puddings and desserts and of course plenty of chocolate eggs.
Here at Little Ellen’s house we love a little bit of sugar and love to bake! Homemade creations are always the best, especially when it comes to food.
This Easter, we decided to start off simple with these quick and easy chocolate cornflake cakes. These yummy treats are a throwback to childhood for some of us, a much loved favourite. The best thing is that kids can get stuck, they are so simple to make. You can decorate your cakes with any cake decoration or toppings.
What will you be making this Easter? Please share your Easter baking plans with us here at Little Ellen. In the meantime, we will share our chosen cornflake recipe with you. Enjoy, and don't hold back on the mini Eggs!
Happy Easter

Chocolate Cornflake Cakes!
(Recipe taken from BBC Food)
Ingredients
225g/8oz plain chocolate, broken into pieces
2 tbsp golden syrup
50g/2oz butter
75g/3oz cornflakes
36 mini chocolate eggs
Method
Line a 12-hole fairy cake tin with paper cases.
Melt the chocolate, golden syrup and butter in a bowl set over a pan of gently simmering water, (do not let the base of the bowl touch the water). Stir the mixture until smooth.
Remove the bowl from the heat and gently stir in the cornflakes until all of the cereal is coated in the chocolate.
Divide the mixture between the paper cases and press 3 chocolate eggs into the centre of each nest.
Chill in the fridge for 1 hour, or until completely set.
