A Sweet Welcome!



Easy Peasy Fairy Cupcakes

Hello and a warm sweet welcome to Little Ellen's blog! We're super excited because not only is it our first blog post, but it's also the official launch of Little Ellen! If you've been following us on Instagram (@littleellen.co) then you will know that we have been showcasing some of our products over the past few weeks, working towards our launch.


Little Ellen was born out of a love of kids and baby boutiques and all the fun and adorable things that create their world. For our online store, we've carefully selected items that are unique and bring a sense of fun and adventure to a little life. We're excited to be expanding our room decor range, selecting items that are practical and help create a happy space. We offer a selection of tableware, nursery products, room decor, gifts and toys, covering newborns to pre-teens. We hope that our products will have a special place in the hearts of many Little Stars (our special name for Little People), and the big people that look after them!

We will shortly be adding our boutique party range to the website. An exciting selection of party decorations, tableware and favours for events such as birthdays, christenings and baby showers. As well as sharing tips, inspiration and ideas for throwing a kids party, our blog will also feature posts and stories all Little Ellen and kids related. We can't wait to share all the fun and ideas with you!



As a small start-up company, a little love and attention to detail is very important to us, every item is carefully checked, wrapped and packed with care. Both personable and accessible, we will ensure that this small business ethos will come across to our customers.

You may also want to know that a small percentage of every sale (no matter how small), will go towards a chosen child focused charity helping to create a world where every child is happy and shines bright!

In conclusion, I just want to say a big Thank you to Kevin - my partner in everything! I love you and these Two beautiful Little Stars we've been blessed with. And a final 'shout out' to all the wonderful people in the world who help create "The Happiest Little Stars!" A special mention to - Happy Stars Day Nursery - such inspiration, we love you guys!


We would love to share with you how we made those yummy cupcakes above, an easy peasy recipe and kids can easily join in the fun.

Fairy Cupcake

(Makes 12)


Ingredients

100g Self-raising flour

100g Caster Sugar

100g Softened butter

2 Large Eggs

1 Teaspoons Vanilla extract


Butter Icing

200g very soft butter

225g Icing sugar

1/2 Teaspoon of vanilla extract


Decorate

With absolutely anything you like! Food colouring, chocolate, Sweets, Marshmallows, Sprinkles.


Method

Adults, pre-heat oven 180C/Fan 160C/Gas 4. Place paper cases in 12-hole cake tray.


Measure and place all ingredients into a large bowl. Ensure that butter is very soft, and sift flour in the bowl before mixing. Ensure all ingredients are mixed well until smooth.


Spoon mixture evenly into paper cases.


Adults, place tray in the oven and bake for 20 minutes, ensuring the cakes have risen and a nice golden colour. Place cupcakes on wire rack to cool.


For the icing, mix the butter, icing sugar and vanilla in a bowl. It may help to sift the icing sugar before. If you choose to, add the food colouring at this point. Continue to mix until you have a creamy thick icing.


Once cakes have cooled completely decorate with icing - you can use a piping bag with a nozzle for this or simple use a spatula to place icing on cakes and smooth over. Further decorate with your choice of goodies.
